Der grüne Hokkaido-Kürbis – ein gesunder Allrounder

Ob als einfaches Ofengem se mit K rbis, K rbis-Gratin, cremige K rbissuppe, Pizza mit K rbis, K rbis-Curry oder sogar K rbiskuchen: Der Hokkaido-K rbis erfreut sich gro er Beliebtheit und gilt als gesunder Allrounder. Die meisten kennen den Hokkaido in Orange viel weniger bekannt ist hingegen der gr ne Hokkaido. Grund genug, diese besondere Sorte einmal besser kennenzulernen.  Herkunft des Hokkaido-Kürbis Der Hokkaido-K rbis stammt, wie der Name schon ver muten l sst, ur spr ng lichen von der gleich namigen Insel Hokkaidō im Norden Japans. Gegen Ende des 19. Jahr hunderts be gannen die Japaner:innen mit der Z chtung des Hokkaido. Erst seit den 1990er-Jahren wird der Hokkaido-K rbis auch in Europa und bei uns in Deutsch land an gebaut und hat sich in zwischen als eine be liebte Gem se sorte etabliert.1 Der Hokkaido ist eine ein j hrige, rankende Pflanze. Er geh rt zur Familie der K rbis gew chse und seine bo tanische Be zeichnung lautet Cucurbita maxima (Riesen k rbis). Die ess baren Fr chte haben ein Ge wicht von ca. 1,5 2 kg.2 Die Schale der runden Fr chte k nnen eine orangene bis hell rote oder auch grau-gr n bis blaue Farbe haben. Im Inneren be finden sich ein gelbes bis orangenes Frucht fleisch, sowie Fasern und Kerne.Der grüne Hokkaido – ein wenig be kanntes Genuss erlebnis Die Be sonderheit des gr nen Hokkaido ist seine dunkel gr ne Schale. Sein Frucht fleisch ist gelb bis orange und punktet mit seinem feinen, nussigen Aroma. Anders als bei anderen K rbis sorten muss die Schale nicht entfernt werden, da sie beim Kochen weich wird und ess bar ist. Das er leichtert die Zu bereitung und spart Zeit in der K che. Durch seinen niedrigen Wasser anteil ist er be sonders n hrstoffreich und gleich zeitig kalorien arm. Au er dem ent h lt der Hokkaido Vitamine wie A, C, und E, die das Immun system st rken und lebens wichtige Mineral stoffe wie u. a. Eisen, Kalium und Magnesium (Eine genaue N hr stoffzusammen setzung kann je nach Anbau- und Reife bedingungen na t rlichen Schwankungen unter liegen.).3Anbau und Lagerung des grünen Hokkaido Bereits im Mai werden die w rme liebenden Samen des Hokkaido direkt in die Erde ausges t. Er bevorzugt einen sonnigen und wind gesch tzten Stand ort. Ab September und bis in den Oktober ist dann die Ernte zeit. Am besten wird ein gr ner Hokkaido-K rbis im Ganzen an einem k hlen und trockenen Ort gelagert. Mit einem un versehrten Stil ansatz und einer un besch digten Schale bleibt er mehrere Wochen haltbar. In St cken l sst sich der gr ne K rbis etwa drei bis vier Tage im K hl schrank auf bewahren. Er kann aber auch ge schnitten in rohem Zustand ein gefroren werden.
