Die Zwiebel – scharf und gesund

Die Zwiebel ist eine Pflanzenart aus der Gattung Lauch. Sie ist eine der ältesten Kulturpflanzen und wird seit mehr als 5000 Jahren als Heil- und Gemüsepflanze kultiviert. Es gibt weiße, gelbe und rote Zwiebeln. Die Roten sind am Gesündesten, weil sie doppelt so viele Antioxidantien enthalten als andere Zwiebeln. Durch den hohen Gehalt an Isoalliin, einer Schwefelverbindung, verfügen Zwiebeln über einen Schärfegrad. Beim zerschneiden der Zwiebel reagiert ein Enzym mit dem Isoalliin. Daraus entsteht der tränen reizende Stoff, Propanthial-S-Oxid. Zwiebeln schmecken gedünstet, gegrillt, gebraten oder roh. Tipp zur Lagerung: Lagern Sie Zwiebeln an einem kühlen (aber nicht im Kühlschrank) und trockenen Ort. Am besten eignet sich dafür ein Tontopf oder ein Leinensack.
