Die B ckerei biokaiser entstand in den 70er Jahren im Rahmen der Alternativbewegung. Anfangs waren wir eine Lebens- und Arbeitsgemeinschaft und haben in der B ckerei versucht, dies gemeinsam und solidarisch umzusetzen. Denn alle Backwaren werden ohne Hightech-Enzyme, Emulgatoren, Stabilisatoren und ohne Beihilfe unzähliger weiterer Zusätze, die in Deutschland zugelassen sind, gebacken. Backwaren v. a. Brote aus lang ruhenden und reifenden Vor- und Sauer-Teigen werden von vielen Menschen besser verdaut und vertragen als die sogenannten „All-In-Teige“. Wenn Mehl, Körner und Saaten lange Zeit haben, Wasser aufzunehmen, bleiben die Produkte außerdem länger frisch und saftig. Zentral für diese Partnerschaft ist nicht zuletzt eine faire Bezahlung über dem üblichen Marktpreis, die es den Kornbauern ermöglicht, langfristig von ihren Bioland-Ackern zu leben – auch ohne EU-Subventionen. Aus dieser Partnerschaft werden ca. 2700 Tonnen Biogetreide jährlich verarbeitet. Die Kornbauern bzw. die ökologische Landwirtschaft verzichtet auf chemische Pflanzengifte, die zwar Unkräuter, aber auch viele andere Lebewesen töten. Auch das Bienen– und Insektensterben kann unter anderem mit dem starken Pestizid-Einsatz in der konventionellen Landwirtschaft in Zusammenhang gebracht werden.
